T-Bone Steak Dinner with Roasted Vegetables & Garlic Mashed Potatoes

Pan-seared T-bone steak served with garlic mashed potatoes and roasted
asparagus, bell pepper, and zucchini. A complete steakhouse dinner at home.

There's something deeply satisfying about a well-cooked steak dinner —
the sizzle of the cast iron, the aroma of rosemary, and the reward of
a perfectly seared crust. This recipe brings the steakhouse experience
home with a complete plate: juicy T-bone, creamy garlic mashed potatoes,
and colorful roasted vegetables.

The T-bone is really two steaks in one — a strip on one side of the bone
and a tenderloin on the other. A screaming-hot cast iron pan gives you
the best sear, while the bone helps the meat cook evenly and stay juicy.
Pull the steak a few degrees before your target temperature; it will
continue to rise during the 5-minute rest.

Roasting the vegetables at high heat concentrates their flavor and adds
a touch of char. Meanwhile, the garlic mashed potatoes get their richness
from roasted garlic cloves mashed right in — simple but satisfying.

Instructions

  1. 1

Peel and quarter the potatoes. Place in a large pot, cover with cold salted water, and bring to a boil. Cook 12-15 minutes until fork-tender. Drain, then mash with butter, milk, 3 minced roasted garlic cloves, and a pinch of salt until smooth and creamy. Cover to keep warm.

  2. 2

Preheat the oven to 425°F (220°C). Trim the asparagus and cut into 2-inch pieces. Dice the bell pepper and slice the zucchini into half-moons. Toss the vegetables with olive oil, dried thyme, and a pinch of salt. Spread in a single layer on a sheet pan.

  3. 3

Roast the vegetables for 18-20 minutes, tossing halfway through, until tender and lightly charred at the edges.

  4. 4

While the vegetables roast, remove the steaks from the fridge 20 minutes before cooking. Pat completely dry with paper towels and season generously on both sides with salt, pepper, and minced fresh rosemary.

  5. 5

Rest the steaks on a cutting board for 5 minutes before slicing.

  6. 6
