Miso Peanut Ramen with Soft Egg & Mushrooms
A fusion ramen with a creamy miso-peanut broth, whole wheat noodles,
jammy soft-boiled eggs, sautéed shiitake mushrooms, bok choy, and
chili crisp. Umami-rich, warming, and ready in 35 minutes.
This ramen is a fusion experiment that became a regular in our rotation.
Traditional miso ramen is built on umami — and so is peanut butter.
Combining the two creates a broth that's richer and more complex than
either alone: deeply savory from the miso, nutty and creamy from the
peanut butter, with ginger and garlic rounding out the backbone.
Whole wheat ramen noodles (or any whole wheat spaghetti) add fiber
without sacrificing that satisfying noodle slurp. Jammy six-minute
eggs are the crowning glory — soft white, creamy golden yolk, resting
in the broth and slowly releasing richness as you eat.
Sautéed shiitake mushrooms bring meaty texture, bok choy adds freshness,
and a drizzle of chili crisp on top adds crunch and heat. This is ramen
that takes 35 minutes but tastes like it simmered for hours.

How our scoring works
Ingredients
- ✓ 8 oz whole wheat spaghetti
- ✓ 3 tbsp white miso paste
- ✓ 2 tbsp natural peanut butter
- ✓ 4 large eggs
- ✓ 6 oz shiitake mushrooms
- ✓ 2 medium bok choy
- ✓ 1 tbsp fresh ginger
- ✓ 4 cloves garlic
- ✓ 1 tbsp low-sodium soy sauce
- ✓ 1 tsp sesame oil
- ✓ 3 medium green onion
- ✓ 1 tsp chili flakes
- ✓ 1 tsp sesame seeds
Instructions
-
1
Bring a pot of water to a boil. Gently lower eggs in and cook for exactly 6.5 minutes for a jammy yolk. Transfer to ice water. Keep the pot of water boiling for noodles later.
-
2
Heat sesame oil in a large pot over medium-high heat. Sauté sliced shiitake mushrooms for 4-5 minutes until golden. Add minced garlic and grated ginger, cook 1 minute.
-
3
Add 6 cups water and soy sauce. Bring to a simmer. In a small bowl, whisk miso paste and peanut butter with 1/2 cup of the hot broth until smooth, then stir back into the pot. Don't boil after adding miso — it kills the beneficial cultures.
-
4
Cook noodles in the reserved boiling water according to package directions. Add halved bok choy to the broth in the last 2 minutes to wilt.
-
5
Divide noodles among bowls. Ladle broth, mushrooms, and bok choy over the noodles. Peel and halve the eggs, place on top. Garnish with sliced green onions, chili flakes, and sesame seeds.
