Black Bean Mushroom "Carnitas" Tacos
Shredded king oyster mushrooms and seasoned black beans slow-cooked
with chipotle, cumin, and lime to mimic the texture and depth of
pulled pork carnitas. Served in corn tortillas with avocado crema
and pickled jalapeños.
Traditional carnitas are made by slow-cooking pork until it falls apart
into tender, crispy-edged shreds. This version recreates that texture
using an unexpected ingredient: king oyster mushrooms. When shredded
with a fork and sautéed over high heat, their fibrous stems develop
a remarkably meat-like chew and crispy edges.
Black beans are mashed and folded in to add body, protein, and a savory
depth. Chipotle peppers in adobo bring smoky heat, and a squeeze of
lime at the end brightens everything up. The result doesn't try to
trick you into thinking it's meat — it's something different and
honestly delicious in its own right.
Topped with a quick avocado crema (just avocado, lime, and a touch
of yogurt) and pickled jalapeños for heat, these tacos are the kind
of plant-based meal that even meat lovers request a second helping of.
